That you can never blame them for anything. They always have like ten back-up systems to cover their butts. And I'm not talking about the good schools and colleges that bend over backward to educate and inform their students in a mutually respectful fashion. I'm talking about the corporate wanna-be schools.

So? What's wrong with covering your butt? It's the schools that don't cover the bases that you'd blame. The ones that do are doing their job.
I teach my classes, offer tutoring after school, send progress reports home on students who are failing and make phone calls home on top of parents being able to access their children's grades on line, 4 progress reports per year and 4 report cards, yet there are still parents who claim they were not informed their child was failing. What part of covering my butt here is a problem?
Have you noticed that some students never blame themselves for anything, and that it is always the fault of the schools and the teachers that they don't know how to interact on a personal level? It's usually the people who are really judgmental and narrow-minded.

"Covering your butt" means creating a diversion so that you are not blamed or so that you do not take responsibility for helping to fix a problem. IMHO.
If you don't like the difficulties associated with teaching students. Then head on out to another field.

Why do you think I send home progress reports and make calls on missed assignments? Because I don't want them coming back later and blaming me.
There are some problems that aren't mine to fix like students who don't turn in their work. My job is to teach, assign the work and grade it. It's the student's job to turn it in. I find it sad we have to document multiple attempts to inform parents that their children don't live up to their end of the bargain or face being blamed for the student's failure. I can't force them to do their work.
There is some truth to that but some "Underperformance" is due to the job being impossible. As a teacher, I can't reach them all. I have too many students to do that. It's not possible to individualize education for 140+ students. If I could, I could probably reach more of them. So, yeah, there is some blame shifting but it's not because we choose to underperform. It's because the task is impossible.
