People, not just Japanese, do sweat when they are embarrassed. The nose bleeds is just a sign to indicate that person is getting turned on.
Anime is based on Japanese characteristics and behavior. Some of the stuff on anime is just some quirk that became popular. American T.V. shows and movies have their own little quirks that may seem strange to foreigners. Like saying, "Wanna come up for coffee" instead of saying, "Wanna come up to my apartment for sex."
