I will take your advice and check out Poland...and possibly Ukraine as well if I have the time/money.

I think Poland is your best bet, it is closer to the West and both cities on your list are great. I wouldn't advice you to settle in Russia, I think the cultural differences would be to much for you to handle - if you are an american.
