I may be able to spend a year doing some studies at the University of Southern Denmark in Odense through my university and I was wondering what living in Odense may be like.
I have been to Sweden and Finland and honestly, I loved both countries. I am assuming Denmark is similar to these 2 countries, but what are some of the good/bad things about Odense and Denmark?

There are neither good things, nor bad things in Odense. It is a *feel smallish* town (but actually one of the larger ones in Denmark), touristy in the summer, but really quaint. Fortunately lots of bicycles !
Compared to the other two countries you visited, Denmark, in my opinion has more charm.
H. C. Andersen was born there, but I never figured out which house ...

You will be OK there ! Keep an open mind. Never compare where you came from, to where you will be in Denmark. Make an effort to learn Danish. Grammar is *the other way around*, and pronunciation might give you a bit of trouble if you are from the USA.

I envy you. I have not been to Odense but Denmark in general is not as cold or snowy as one would expect in winter, just dark. And the summer days are never ever ever hot. Ever.
Denmark is a lovely country. Though I have spent most all my time in Zealand, therein Copenhagen and outer lying areas. Cost of food is much higher in Denmark vs Sweden. I prefer the taste of Sweden's tap water over Denmark's. I've found Danes to be a bit more open and friendlier than Swedes, but that might be because I know more Danes. True Danish rugbrød can only be found in Denmark.

I guess that depends on how you define hot. I have been there 11 times in the past 20 years, and I do recall it getting pretty hot a couple of times.

Not all rye bread is created equal. Rye bread made in Sweden doesn't compare to Danish made rye bread. Danish municipal water is very different, I believe that affects the flavor quite a lot. Danish rye bread weighs several kilos more than other types of rye bread.
Do not speak ill of the Danish please ...
Denmark is a well-organized country, its laws are enforced with much rigor, perfection.
