Tortilla de patata: omelette with egg and potatoes.
Paella: yellow rice with seafood, meat or whatever you like.
Gazpacho.
Salmorejo.
Lechal.
etc

Generally using always olive oil, natural ingredients, Mediterranean style.

Once while I was on my way to Madrid I had trout stuffed with bacon ... It was very tasty.

Tortilla is made of Sliced Potatoes, eggs and choice of onions or chorizo or mushrooms.
You fry a lot of slices of potatoes, then add the eggs , then your choice of onions, chorizo etc. and cover the pan with plate until the eggs get dry and flip the pan with the plate to cook the other side. It is shaped like a pie and about 1 inch thick.
