I imagine the OP could increase the resistance on the elliptical, too, and just have a harder workout.
Yeah. Thats what I meant. I meant that she should aim for bettering her time like you said. I guess I was thinking increasing her ability to complete the exercise in shorter period of time.

I'll try it out (increasing resistance).

I will say that I am terrible about the three meals a day thing. I usually eat two (a big lunch and a decent sized dinner). I should really try going back to the five to six small meals a day.

Why dont you try to to better your time? I think overall, it would be more beneficial to you. You are already doing resistance/weight training so you should try to either:

1. Go further in your hour elliptical workout.

or

2. If your normal distance is 6-7 miles, aim for going that same distance in less and less time.

I think this would be better for you.

Breakfast like a King
Lunch like a Prince
Dine like a pauper

is what my Grandma says and she's as fit as a fiddle at 83

I try not to eat too much in the evening - I probably eat the most at lunchtime.

Your eating is what slowing down your weight loss process. You really should start eating 5 meals instead of 2. A humans body can not get all the necessary nutrition in only 2 meals. You said you are eating 1500 - 2000 cal per day, so that means you are eating 1000 (!!!) cal meal at once. Your body takes about 400 cal worth of energy in lunch time and about 300 - 400 in dinner time, the rest is going straight to fat. It really doesn't matter how hard you work out if you don't eat right.
