I will be visiting Delta Junction, AK next year but will probably be spending most of my time in Fairbanks.....anything that I should not miss while I am in the area?

Not a whole lot of must-see stuff around Delta, just a lot of nice empty woods, tundra, lonely rivers and mountains. A few nice spots are Quartz Lake, Rika's Roadhouse, and the Clearwater River. A drive 70 miles or so south through the Alaska Range to Summit Lake is mandatory. For restaurants, Taste of Europe is probably the best, The Drive In is good for burgers and ice cream in the summer, and The Cave is a good place to have a beer, though their food has been pretty boring.

In Fairbanks:

a. If you enjoy to taste a good beer, stop by The Silver Gulch in Fox (just outside Fairbanks)
b. The University Museum at UAF
c. Chinese food? The Pagoda in North Pole
d. On the way to Delta Junction: stop by the Knotty Shop in Salcha (after you pass the Eielson AFB runway, a couple of miles on the right). You won't miss it.
