Yes, beauty is in the eyes of the beholder. To response to the OP's question, it's a combination of genetics, diet, and lifestyle. Most Scandinavians eat a healthy diet, spend time outdoors, and stay active.
People in dark skinned countries bleach their skin, trying to lighten it, while white people jump into tanning beds, trying to darken themselves. The grass is always greener on the other side. To be 100% honest, I see beautiful people (and some not so beautiful, to be totally honest) of all races, everyday of my life. Maybe we should all try to love ourselves more, just as we are. Nobody ever wins the war of the self-hating body image.

Like the title says, why are Nordic women so beautiful? Is it diet, genetics? Maybe the cold weather caused them to develop smaller more delicate facial features? Anyone know?
I've lived in Scandinavia, and I gotta tell you, there are plenty of average-looking women there, too. Pudgy women (even in their teens), plain women, all kinds. I think you just have a preference for a certain facial type, which you take to be universal there. I guess southern Europeans, French, and Slavs need not apply? To say nothing of the wide variety of Asian women, Latin American women, Native American women, etc.
