You gotta be subliminal about it. Don't mention her weight, just keep taking her out to dinner, keep her favorite flavor of ice cream in your freezer, and keep the love makin' good.

Do you mean you want her to gain weight because you prefer it, or do you mean you want her to know that you'll still be attracted to her even if she's heavier, so she won't feel that she needs to be super hard on herself if her weight fluctuates? If it's the former, dude, don't even. If it's the latter, I'd say you can do things like complimenting features that don't have to do with size (personality, eyes, etc.) and if you hear her making a negative comment about her weight maintenance routine ("I can't believe I ate all that ice cream, I feel like a heifer") just take that opportunity to respond that she's beautiful no matter what, or whatever.

Health is the only truly important factor. What a man/woman "prefers" in their woman/man on this subject should remain irrelevant to any and all behavior. I'd even go so far to say it's time we all shut up about what body type we "like".
