That said there's a sizeable Muslim population where I live and I'm not sure I've seen what you describe. Most of the headscarves I see are fairly close-fitting and often bright colors.
I don't see that. However, other than hair and hair holders, some of the scarves are very large and can be folded in different ways, sometimes giving more volume on the top or back than others. Try wrapping a scarf around your head so that it looks neat and stays there and you'll see.

Ive seen some of these girls with humps the size of basketballs. That's why I think that it couldn't be just hair alone.

But if a woman wants to carry something, why do you think in a lump on the back of her neck would be preferable to a purse or a backpack? It's just hair and extra fabric from her headscarf. Really.

Not all Muslims wear their scarves the same.
The ones you probably see are Turkish, no Muslim stores anything there, it is just the way it is wrapped up and the way they made their hair. Turks usually keep their hair very long and make it up/tie it, what ever the term is (i.e., not loose), combine this with the way they wrap their scarf, it just looks like the scarf occupies a lot of area.
