Really, I think it is because the white color of a diamond goes with everything. Some other stones don't match as well. Also, the sparkle of a diamond is very eye catching.
Of course, there are also those that like to flaunt wealth and the more and the bigger the diamonds the more they like it.

I'd like to also add that my best friend and boyfriend knows that when the time comes I want a pearl (preferably pink) engagement ring, not a diamond. I wouldn't mind some stones around it but no diamonds.
I used to love 'em until I learned that their prices are hugely artificially inflated and their rarity is overblown and hyped up. The diamond conglomerate/monopoly can suck it. I'll do different things with my money.
