I have used Sumi ink in the past, but not for traditional brush painting (I used it with liquid soap to produce abstract "drawings.") I do know that the quality of the rice paper and the brushes comes into play with this type of painting. The ink itself is not expensive, but the paper can be.
That is what it is called - there is a difference between Japanese and Chinese methods, and there are several books that term it that... I guess we can call it Asian.
I have found several videos on youtube of all places and a place that sells the art supplies...
