Yeah, Bohemian. Bohemia is an area in central Europe, now part of the Czech Republic. Chicago had lots of Bohemians and the neighborhood south of my old neighborhood (which was predominately Irish) was Bohemian. We used to go over to Bohemian restaurants like Klas, Old Prague and the Dumpling House. They had good bakeries too. The Bohemians being the Slavs most affected by Germanic culture their cooking is more like German than Polish, or so it seems to this Irish-American.
There are still quite a few Bohemian restaurants in Chicago’s western and southwestern suburbs; many of the city’s Bohemians moved from their old West Side neighborhoods of 18th St. and south Lawndale and the inner western burbs of Cicero and Berwyn to the southwest suburbs.
The Democratic political machine that dominated Chicago in the mid and late 20th Century started as an alliance between Irish and Bohemian politicians and the machine’s first mayor was Anton Cermak. My father grew up in an Irish island sandwiched between the Jews and Bohemians in Lawndale on the West Side. They were right down the street from Cermak’s house.

As well as Greek food mentioned above, add Polish cuisine to the "other" category. Maybe make it the wider eastern European category, because I know a woman from Romania who is a fabulous cook ...
I voted for all except Italian (not a huge fan of pizza & pasta, or maybe I've never had the good stuff?), and Ethiopian/African because I don't think I've had it.
But Mexican, Middle Eastern (Persian, etc., to which Greek is a close relative), Indian, and Chinese, Japanese, Thai...yes please!!
Oh, and I don't consider myself a foodie at all. These cuisines are all considered quite "normal/mainstream" where I live.
