Mushy is when... the potatoes are overcooked and then beaten to death with the wooden spoon.
You get the potatoes ( red skin is the best ), then cook, peel carefully, slice not too thin, leave alone.
Then you prepare the rest:
the onions, bacon, the dressing, chopped green onions ( for color ), hard boiled eggs ( if you like ) maybe finely chopped red and yellow paprika wedges ( for color again) ; you mix the dressing, add little salt and pepper and/or bullion and warm it up - then when you have everything ready, you pour it over potatoes, CAREFULLY!! 2-3 turns with the wooden spoon and that's it.

Another great idea: just cook potatoes with skin, then slice them, add chopped anion and fry to golden brown on the pan. Add seasoning for taste. Again, be careful, try not to break to many of the slices for a better look

What about "choripanes con pebre"?




The bread is warmed on the grill too. Choripanes are eaten before the main entry, as an appetizer. Good with a cold beer.

The main dish here would be grilled chicken and beef, usually accompanied with salads.

Oh, honey, then you've never had REAL German potato salad....you use the rendered bacon fat in the dressing.....now I have GOT to make some.
