Beef enchiladas w/ homemade Ten Minute Enchilada Sauce Recipe - Allrecipes.com
w/ sliced tomatoes on the side.

Egg and Broccoli Casserole Recipe | Taste of Home Recipes (NEW)

I will be trying to cut down on the amount of butter in this recipe somehow!

We went out also but to Taco Bell the kids chose. I wanted to come home to cook or go to our fav mexican joint but the line was out the door. Wonder if Guy from FoodNetwork has been there.

Today was Kielbasa with mixed veggies, a salad, and some garlic bread. Cheap, tasty, and relatively healthy since it was turkey kielbasa but I'm sure they loaded it with salt.
