Leftover stuffed zucchini boats. I was away visiting my daughter, and then my mother for a little over a week. I asked DH to take care of the garden for me while I was gone. It rained, so there was no need of watering, and he pretty much ignored it. I came back to overgrown okra pods, dead ripe stuff in the dirt, and a dozen zucchini squashes the size of Goodyear blimps. I hollowed them out, steamed them, and filled them with ricotta and mozarella cheeses, topped them with my homemade pasta sauce (he didn't pick any of the romas either) and baked them. We had them for dinner last night, and he's getting them for lunch again today. Probably for dinner again tonight, too.

Planned on having a sandwich but forgot to get bread yesterday! What I call "emergency pasta" lunch -- angel hair and some leftovers. I'm hungry . . . this is the day that starts at 5:30!
