Scrambled eggs, bacon, cheese grits and toast with strawberry preserves. Orange juice to drink. A big ole breakfast this morning...Very rare for me. It was sooo good.

This morning was spent at the Old West Cafe in Grapevine, TX. There, I had chicken-fried steak, scrambled eggs, hash browns, an English muffin, and coffee.
Too ODed from eating lastnight's rib meal & everyone still feels full...
Having a simple cereal & milk & coffee this morning.
DD only can stomach a banana.
1 corn tortilla cut into small strips
a 1/4" slic of onion chopped
about 1/2 of a jalapeno, chopped
Saute those in a little oil until cooked/browned.
About 1 ounce of pepper jack cheese grated and 1 tablespoon of non fat cream cheese.
Beat 1 whole egg and 1 egg white
add a dash of cumin and chili powder to eggs
When onion and tortilla are ready,turn down heat to low, add eggs. Drop in the cream cheese and stir eggs around to cook. When eggs are getting close to be ready, sprinkle on the pepper jack cheese.
Give it a flip, and plate it up.
Pretty low calorie breakfast, yet filling, and very tasty.
It might have taken me more time to type this than cook it.
