Try this one. It is a simple chicken, rice , broccoli, cheese recipe.

2 or 3 large chicken breasts - boneless and skinless
1 box Rice-a-Roni - broccoli cheese flavor
1 can Cream of chicken soup (You can use cream of celery or cream of mushroom if you prefer.)
1 soupcan Water


In a medium/large bowl, (I have a huge glass measuring cup I use) open can of soup and pour in, then add the soupcan of water. Open the rice-a-roni and pour in the rice AND the seasoning packet all in the same bowl. Stir until blended.

Take a square 8 x 8 glass pyrex dish and spray well with Pam. Pour in rice mixture. Take chicken breasts wash and cut in half. Place evenly on top of the rice mixture - kinda poke them down into the rice mixture. Cover TIGHTLY with aluminum foil. Bake at 350 degrees for an hour and a half.

This would probably give you 3 meals or so.

I guess that includes seasoning and hard shell corn tortillas. We've used McCormick's taco seasoning for years. We just like it better than the others though some are similar. Fajitas in corn tortillas are also great! Especially with a pico de gallo salsa. Better with Guacamole or just avocado added. There are many breakfast tacos for flour tortillas. Scrambled eggs mixed with bacon or sausage (pan) or bean, bacon and cheese. My favorite is Carne Guisada (described as a Mexican stew). I experiment with this type regularly. I can make them fairly well. I'm not much for new things either. But I'd try some of the other types they can be very tasty!

Dinner:BBQ pork, rice, and butter peas.
Dessert: Baked sweet pots slathered in butter & sprinkled with a ton of brown sugar

Baked salmon with basil, some kind of potato dish, and sauteed broccolini and garlic. I usually prefer rice with fish instead of potatoes, but we just had rice a few nights ago, and dh doesn't really like rice. We aren't crazy about pasta either, so potatoes it is.
