Stuffed Bell Peppers since they are in season and reasonable. Just had one with a side small plate of green salad. Trying to loose weight so only ate a large one instead of two.
Actually made 6 so the others will go into the freezer for a later date.
Pork chops, (using a yummy recipe Elston posted here two years ago), stuffing, (Stove Top with some goodies added to doctor it up a little) and a yet to be determined veggie.
Elston's pork chop recipe:
brown them in oil (not to cook em.....just to brown lightly)
then mix up 2 T brown sugar
!/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dry mustard
1 tablespoon lemon juice
a couple shakes of worcestershire sauce
1 can of tomato sauce
1/4 cup water
and I like some chopped green pepper for color and flavor... (<<< Elston wrote this too, not me.)
put mix over chops in a baking dish single layer
cover with aluminum foil
bake about 45 mins to an hour at 350*. If your chops are really thin ...... less time.
I remember this-sounds soo good-didn't bookmark before-will do it now!

I am going to pay for my dinner I made shrimp scampi using a highly rated recipe from Allrecipes and it was so greasy....yuck!!! I never do well with grease. So for all who can help, please post your favorite shrimp scampi recipes over in recipes. Thanks.

Was already steaming the asperagus when they ran an add for Pappajohn's pizza on tv~ so put away the potato salad and chicken breasts and ended up with asperagus and cheese sauce and pizza!
