Our taco day was heavenly and fun but a lot of hard work. One friend (God bless her) worked along with me while 2 guests were oblivious and hubby hovered between both groups. That sweet angel made me homemade sangria and kept my glass full. The (other ) good news is I have lots of grilled steak for taco dinner tomorrow. And lots of leftover red and green hot sauce, chopped onions & cilantro, pinto beans'n'bacon, etc. I need a day off!!!

I did get a great compliment from a guest that said she would pay $7 for just one of my tacos!!

As for further leftover usage for another day, I'm cogitating on turning my taco sauce into an enchilada sauce...?

I bought a 4 pound ham at a good price a few days ago. Finally sliced it up yesterday for sandwiches.

Except for the heel, I diced that up and will add it to potatoes and onions.

We had ham last night, TK. I'm making a double batch of ribollita today for us to eat tomorrow. I have a lot of leftover ham too, so I'll probably make another soup or two out of it.

Tonight's dinner is spinach pie. I had some spanakopita a couple weeks ago at a restaurant that was so good, and I wanted to make some at home. However, I've never used phyllo, and most of the recipes I found use feta, which my husband doesn't like at all. The cookbook with my ribollita recipe also has a recipe for spinach pie, made with raisins and olives and a yeast crust. My husband has agreed to make the crust for me (he is much better at rolling it out than I am). I am also adding some pine nuts in case to make sure it's filling.

Wish me luck. This might be great ... or it might be terrible!

Holy moly, last night we took DS and DIL to an Asian fusion restaurant and it was so fabulous I want to go back soon. DH had whole, deep fried sea bass (caught by the chef that morning), I had green salmon which was grilled and covered with some yummy basil sauce, son had stuffed flounder and DIL had a crunchy roll and another breathtakingly beautiful type of sushi. Finally, a restaurant with superb food and beautiful decor.
Tonight, it's diet portions of a wee little steak, a wee little plain baked potato and a mountain of yucky vegetables.
