I'm making baked coconut shrimp tonight. You make a crispy coating with coconut and panko, after dipping in flour, then egg white. Bake it in the oven til the shrimp is cooked, and hopefully they are as good as the fried kind. Sauce is made with soy sauce, sweet chili sauce, and dijon.
I remember trying Oprah's chef, Rosie's, oven fried french fries with egg whites, and they were very good, so I'm eager to try the shrimp.

Puttanesca sauce (from a jar).
Jumbo shrimp (from the freezer) that I'll toss in olive oil and s&p, and broil.
