Tonight is chicken enchilda casserole with 2 cans of cream of chicken, 2 cans of chicken with rice, and one can of cream of mushrrom. Chunks of breast of chicken, mild chilies, olives, and onions. For this you use flour tortillas not corn. You don't have to roll the tortillas you fry them in a bit of oil when brown take them out, for my gang really i have to fry at least 40 tortillas, i know this is what takes so dang long. Then all you do is layer the tortillas, with chicken, chilies, olives, onions, and tons of cheese in between you have to put the soup mixes between each layer with tons of fresh shredded cheddar. Really easy and so very good. I made Spanish Rice, beans and a salad.

Made a b/d cake for my daughter it has bavarian cream with strawberries, and made a buttercream frosting. That is it. Margarita's and i am relaxing

If you like enchildas, you will love this.
