Tonight, we ate dinner at Applebee's thanks to a wonderful gift from the parents of one of my students. As an inner-city teacher, I don't get many gifts, so when one comes my way it is really special.

DH didn't thaw the shrimp, so tonight's dinner got moved to tomorrow, and we had black bean stew in corn tortillas w/ plain yogurt dollops instead.

^^^^^^^^^^I think I might very nicely ask my lovely wife if she could cook this tonight. She is from Mexico and has not made this dish in a little while. It is awesome! Heck, I might even surprise her and make it for her. Hopefully she will make her homemade tortillas de harina(flour tortillas).

I scored a ridiculously low price for pork chops, so tonight it's pork chops with sour cream mashed potatoes and a side of baked beans. Yum!
