That sounds so easy, and be creative with the toppings, perhaps a little splash of sour cream as well.

So, so glad I finally braved it and cooked some eggplant at 61. Looking forward to more years of cooking with this wonderful vegetable.
It's always a little intimidating using a vegetable for the first time. I was like that with eggplant a long time ago too

Today I will be having homemade carrot burgers.

Hubby had pasta and sauce with sweet Italian sausage.

I had some cantaloupe and 2 pieces of ham wrapped around swiss cheese.

I haven't eaten like this in a long time!

Let's see, I ate some salad, some tuna, some chicken salad, and asian spiced chicken strips. with yogurt and oreo pieces and an apple.

I was hungry today!

Hey, it sounds weird, but looks tasty. I'll be back to give a review.
It was not bad. Both hubby and son ate a big piece and enjoyed it. Hubby even took some to work for lunch today. I don't think I will make it again because all of us would rather have real pizza.

I have declared this a scrounge night in our household. Hubby is having oatmeal, son is having leftover ham casserole, and I am having sugar free jello with whipped cream.
