Didn't feel like cooking today and the wife was tired when she came home from work so we headed out to The Seafood Pot and had boiled crabs, boiled crawfish, with corn and sausage.
I also picked up 4 soft-shell crabs so we will have bbq soft-shell crabs Saturday afternoon. They are in the fridge marinating overnight. You don't have to marinate them overnight. If you don't have the time this can be put together and cooked just fine. If you do marinate overnight make sure that you let the butter mixture cool down before pouring over crabs. The recipe below can also be used to make bbq shrimp.
BBQ Soft-shell Crabs
4 soft-shell crabs
1lb butter
2tbs creole seasoning
2tsp black pepper
2tbs ground rosemary
1/2 cup worcestershire sauce
4tbs minced garlic
1/2 onion minced
3tbs Italian seasoning
4 lemons quartered and squeezed
4 bay leaves
Clean the crabs by removing the eyes and mouth part with scissors.
Open the crab shell and remove the sand gills making sure not to wash and remove the fat under the shell and set aside.
Heat butter along with the remaining ingredients until well mixed.
Place crabs backside down in an 9"x9"x2" deep baking dish and pour butter mixture over crabs.
Make sure that crabs are completely covered, if not add more butter.
Heat oven to 350 and cook crabs about 1/2 hour or until crabs turn red.
Remove from oven and serve with hot French bread to slop up the sauce.
