Not sure. I'm thinking beef stroganoff with noodle and a salad, or possibly swiss steak, mashed potatoes and green beans. Our oldest in home for a couple of weeks, so I may ask him what he would like, since he lives on Whataburger and Chick Fil A most of the time.

Thumbs up Finger Licking Good!

A bucket of KFC chicken.
We will be having homemade mashed pots and canned baked beans for sides.
I think we have some corn on the cob leftover from the other night to eat also.

Tonight we'll have BBQ chicken with baked stuffed clams and baked stuffed scallops.
(I'd trade ya for that KFC!)

Think we will stick a few boneless pork chops on the grill for a few minutes, have the left over Asian cold slaw from Sunday and left over rice from last night. I guess it is called get the crap out of the fridge before it spoils night.

Beer battered fish, tarter sauce, fresh steamed white squash with onion from the garden, roasted yukon gold potatoes and cut up watermelon.

Dandj's Groundnut Stew. It looks very easy. I am not a fan of chicken due to the fact that my dad has broilers and growing up before everything was automated, it was my job to feed them. So chickens kind of revolt me to this day. But my husband likes chicken, and I do cook some chicken and try to disguise the fact that it is chicken by trying different recipes.

Double up on the peanut butter (trust me), double up on the red pepper flakes (trust me), and use cornstarch to thicken the liquid if it's soupy rather than saucy (trust me).

You can serve it over rice (we use brown) or mashed pototoes (you can never go wrong with a potato, right?).

Enjoy!

Oh! Also, don't do it in a wide pan (such as a dutch oven). For whatever reason, the sauce doesn't thicken well -- nor does the meat fall off the bone -- as well as when you do it in a higher, narrower pot. I don't know why. I guess it's because the heating element is not as wide as a dutch oven.
