I cut up some potatoes, broccoli and cauliflower to roast with a little oil, garlic and parm cheese. Then I went to get the chicken tenders to make and there was only 1 in the bag. (Gotta talk to the husband about that because I know I wouldn't leave 1 skinny little chicken tender in the freezer.)

So anyway we are having the veggies and a bag of pizza rolls

Pork tenderloin - one of those that are pre-marinated. The meat was fine but I'll have to check what the marinade flavouring was because I didn't like it. And fresh potatoes, mashed with sour cream, and fresh peas.

Talking Whats for dinner tonight?

Have posted a couple times in the past.

Stuffed Green Bell Peppers with two lbs of Pork stew meat cut up into smaller bits.

When they are in season...I buy...cook...freeze.

3/$1 is a good price even tho they are not the large kind...will check again next week.

I pre cook the meat 75-80 % sprinkled with a dash of 10 different spices.

Cooked 1-1/2 cups of 5 min rice.

Cleaned and gutted 9 Bell Peppers.

Mixed the two together...filled the peppers...topped off with catsup...into pyrex dish with 3/4 water...covered with saran wrap and microed for 25 mins to finish cooking the meat and peppers.

Had two for dinner...will freeze rest after they cool down a bit.

Later this week will deep fry some boneless chicken dipped in egg batter and covered with bread crumbs and again freeze the rest.

Just turned 80 last sat so I do have to look ahead somewhat.

This sounds very intriguing to me- I don't think I have ever met a pineapple dish I didn't like. Mind sharing the recipe or if you bought it brand and where found?

Brisket was on sale for $1.99 a lb so we splurged and got a huge one. Even after trimming it took 2 pans and I have HUGE ones. If it was cool enough to grill - there's a burn ban even for bbqing- it would have been hanging over our old Weber.

We'll be having brisket; Sister Schubert's quick bake rolls topped with butter & seasoned garlic salt (we're addicted); cuke & tomato salad; watermelon.
