This turkey salad is a great use of leftovers, especially the leftover dark meat which tends to be overlooked in my house in favor of the white meat for sammiches. It's really good with the pickles and hard-boiled egg. I like to buy the pre-cooked-and-peeled eggs in the bag, so it's just a matter of chopping everything up.

I absolutly love Turkey on white bread with mayo, cranberry and S&P.
The day of Thanksgiving is for Family and friends.
The day after for me to get fat on leftover pies and Sandwiches.

JJ, the turkey salad recipe looks fantastic! I've printed it out to use on Friday. (Although, I think I'll make a "lighter" version!)


I enjoy Thanksgiving dinner leftovers as much, or more, than the original meal! I like to use the carved-up turkey carcass to make a big pot of soup. Yummy....I can't wait!

PJ, I take it easy on the mayo too. I like to use just enough to bind a salad, not make it all goopy. I up the amount of mustard as well.
