Fryed ham and home frys. Ham and scramble eggs. Cut the ham thin and put it on a grilled cheese. Cube it and put it in broccoli salad or a normal salad.

Save the bone and excess broth for Ham and lentil soup.....
Ingredients

Ham Stock
  • Ham bone, and stray bits of leftover ham
  • 3 quarts water
  • 2 carrots, roughly chopped
  • 2 celery stalks, roughly chopped
  • 1 large onion, roughly chopped
  • 2 bay leaves
  • 2 teaspoons dried thyme
Lentils
  • 2 tablespoons olive oil
  • 1 cup minced yellow onion
  • 2 teaspoons minced garlic
  • 1 pound green, black or brown lentils, about 2 cups (we used French green lentils which cook up a little on the firm side)
  • 5 cups ham broth
  • Salt
  • Slices of leftover ham

1) Creamed ham served on toast, biscuits, or English Muffins. Add some diced pimento and a little dry sherry. Sprinkle with chives. This is a delightful dish.

2) Ham Biscuits. Just add some minced ham to the batter.

3) Variation on pimento cheese. Just add minced ham.

4) As an addition to egg salad or devilled eggs. Mince very fine for devilled eggs.

5) Minced ham in scrambled eggs.

6) By itself or with other things in an omlette.

The above are all good but my absolute favorite is the creamed ham.

we had a wonderful ham and asparagus quiche tonight

also I made a huge pot of cauliflower soup (Pioneer Woman Cooks) and tomorrow night I will add some left over ham

the smallest ham I could find was 6.5 lbs for 5 people so I have a lot of ham leftovers and I wouldn't have it any other way. somebody who would throw good food away has more dollars than sense and it very wasteful and probably has very little experience in the kitchen.

I'll use my bone to make a good batch of Senate Bean Soup later this weekend. and some of that will be frozen as well. I would much rather have ham leftovers than turkey . So much more versatile I think.

My 4 kids and I had a ham shank for Christmas and it turned out so good there was practically nothing left. If I had leftovers we would make sandwiches, split pea and ham soup, and warmed up ham with melted cheese on top.
