Can anyone give me something about Shallots??
So popular with chefs..but i'm cooking for old folks that dont like change..

I recently got into a little spat with My Grandfather about the smell of his brand of Chili powder coming from Cumin.. It has an unmistakeable smell and flavor..


Just little things..

I had Lamb recently at a Rodizio (spelling) Place..It had this Marsala flavor.. It was like food for the gods.. Spices they fought for 1,000 years ago..
Never in my life of eating Lamb would I have expected this..

^ Shallots are very similar to onions, I bet if you didnt tell the old folks, they wouldnt know.....
Do you mean lamb masala, that would make more sense than Marsala wine sauce.

If I were limited to one spice it would be black pepper. Other than that, I'm partial to cilantro, cumin, rosemary, garlic, and sage (in no particular order.)

Spices and herbs, just a few of them:
Flat leaf parsley
Sage
Basil
Oregano
Cinnamon
Cloves
Ginger
Bay leaves
Chilli peppers

Garlic and onions, needless to say

masala Is just a blend of certin spices..Not really a dish of any sort..
Any family can have their type of Masala.
I was took in with Gharam masala.. Spelling not sure..
It was good.

Yes, I am aware of that....you said Marsala, not masala in your initial post, then waxed rhapsodic over the spices, (and rightly so) hence my confusion.
I cook Indian at home, blend my own spice mixtures.

Lamb Marsala

Shallots, I've bought them and used them but they aren't worth the price. Any bulb onion or even green onion can be used instead.

Spices,
Basil,
Ground caraway,
Paprika-smoked or Hungarian,
Ground pepper,
Garlic,
Onions
Everything needs a little salt while cooking, not at the table!
