Hi - I have a question for y'all. I made a banana bread yesterday, and had a piece today. Since it was from the end, the bread seemed to be baked correctly, but as I slice into it, it is underdone. Is it already sliced - is there any technique to get it baked/microwaved to the correct consistency? I am thinking about putting the slices on a cookie tray and baking it for a while longer and wanted to know if anyone else has had this experience.
I have never had that happen with banana bread, but I think your plan to slice it and rebake is a good one. Years ago I baked an apple spice cake and it should have been done. When I took it out of the cake pan, which was a bundt, it was not fully cooked inside. I just poured it back into the pan and baked it again. It was perfect. Good luck and Merry Christmas.
Saute it slice by slice as you eat it in a light film of butter in a skillet over low heat until browned on both sides like a lightly toasted grilled cheese sandwich. It will be delicious.
