A neighbor just gave me a load of small, nearly ripe avocados. I make great guacamole, but how much of that stuff can you eat? I've already made fresh corn, avocado and tomato salad (love it!), but need more ideas.
I love avocados and wish that I had your problem - $1.50 each on SALE here! If you find that you are not going to use them all remember that your local FoodBank and Soup Kitchen would be glad to take them off your hands.
You can make guacamole and freeze it in individual sandwich bags, you can use it as a spread on sandwiches instead of mayo, make tacos and add avocado, make a cobb salad.
