For lunch I make this sandwich: on whole wheat bread... veggie cheddar cheese, tomato, lettuce and a couple of wedges of avocado.... with a touch of spicy mustard.

Avocados have to be one of the greatest fruits/vegs out there. I love it on everything but a simple open face toast sandwich with avocado and a little salt is awesome.

Now, I need to get to growing them. Wish I could get them to actually stay alive. Then, I hope they will grow in the PNW as well.

Going to the store today to pick up at least one avocado. Sadly, all we have here are the Haas and the Florida varieties.

Are there other varieties?

Interestingly, the avocado came into existence partly because of giant sloths and other extinct giant herbivores. Weird huh? I read that in an article a while back and thought that was cool. If you think about it though how many animals today could possibly eat a avocado, especially the Florida variety, and deposit the seat in another area? None because they died out. Just an interesting tid bit.

We have this for breakfast - and lunch, frequently. I love the creamy texture of the avocado as it contrasts with the crunchy whole grain toast. I also add sea salt and freshly ground black pepper.
Sometimes I drizzle it with lemon juice or add a slice of tomato.
