This. I'd add walnuts, baked or stir-fried tofu strips & a warm olive oil/vinaigrette dressing. The cool salad ingredients mixed with warm ingredients is delicious. Takes about 7 minutes to make ~

That's a great quick nutritious meal, unless you follow the Elvis Presley recipe, and saute the sandwich in a whole stick of butter.

Yeah, a ripe garden avocado. A spoonful of cottage cheese in the pith bowl, if it's available. But it's not necessary. The only problem with eating right off a fruit stand is you need a knife and spoon to cut it open and eat, but otherwise it's the perfect meal on-the-fly.

Quickly stir fry sliced green peppers, onions & tofu. Serve in a warmed whole wheat tortilla & salsa for tofu fajitas.

Steak and grill veggies. Or a simple cheese burger w/lettuce, tomato, and onion. All homemade, of course.

CCM now you have made me hungry.
Lightly bread chicken cutlets and saute with onion & garlic 3 mins. ea. side, take cutlets out and add white wine in pan and reduce by 1/2 for 3 mins., add cutlets back in pan, cover and simmer 2 mins. longer. Serve with fresh vegetables or salad. Simple and just very good.
Where is Wilson?  Hmmmmm!

Oven broiled chicken breast and a salad.
If the chicken breasts are REALLY thick, slice horizontally to make them thinner. Marinate in some low sodium Dale's, add some lemon pepper with the chicken in a ziplock. Line cookie sheet in tinfoil (no cleanup later), place oven rack as high as it will go. Put oven on broil - Hi. Broil chicken for about 7 minutes on one side and flip, and broil 5 minutes or so on the other. You will know when it's looking done. Add a tossed salad. Cleanup involves throwing away the tin foil!
This is the only way I do chicken breasts now - except on the grill. They are soooooooo moist and tender.

BBQ chicken, steamed broccoli and sweet potatoes. I also love a big salad with dried cranberries, sunflower seeds, avocado and light dressing. Yum! I'm really hungry now

I'll sometimes just microwave some frozen baby lima beans and toss it with vinaigrette and parmesan cheese. It's satisfying. If I think it needs something more I'll chop up green onions, jarred sun dried tomatoes and whatever else looks good. It's always nice to have cooked bacon bits in the fridge for a salty note.
The best protein for a quick meal is a bag of large frozen shrimp. Four or five is a decent portion, and they saute fast with salt, pepper and olive oil.
