If I'm going for quick & healthy, I'd say my go-to meal is sauteed veggies & chicken seasoned with Mrs. Dash.

Bring two measures of water to boil in a saucepan, and stir in one measure of plain corn meal, pinch of salt. Keep on highest possible heat, it won't burn if you stir constantly with a wooden spoon. Stir until it no longer stirs, but just rolls over as a ball of doughy substance, it'll only take a minute or two. Plop it out on a plate, put a generous pat of butter on it, and cover with sour cream. Have a sliced tomato or something on the side. I have this for lunch at least once a week. Its the Romanian national dish, in simplfied form, called mamaliguta cu smintina.

(This will leave a stuck-on residue in the bottom of the pan so use teflon if possible, or let it soak in water for a few hours, and it will come out easily.)

Yes and Romanians use polenta. I had some at Christmas.

Black beans, sauteed with a little garlic and onion and mashed with a spoon. Folded up inside an omelet with a little shredded cheese and topped with salsa.

Quesadilla. Tortilla, cheese, whatever I've got in the fridge, tortilla, and grill it on both sides. Plop some salsa and sour cream on top.

My go-to type of meal on a weekday night when I am pressed for time:

About 4 0z of chicken sauteed in a pan until it is about half done. Throw in whatever veggies I have. (Last time it was bits and pieces of the following - kale, squash, red pepper, garlic, snap peas, carrots and mushrooms). Add 1/4 cup of quinoa and 3/4 cup of chicken broth, plus a tablespoon of butter because I love butter. Any old white wine laying around? Throw in a little of that too. Cover, reduce heat, cook for 30 minutes, watch 1/2 of Jersey Shore or something else really stupid. Then, voila, eat during second half of silly tv show.

That probably would be a salad with whatever I have in the fridge. As for the topic? Sliced chicken breast, or few shrimps, tuna chunks from the can or even mussels from the can. If no meat then just feta cheese, tomatoes, avocado, and usual stuff. Light ( NO fat free) dressing.
