Umami, that is my goal this year, is to try more foods with Umami, and really define what that taste is exactly. It is in tomatoes, Dashi, potatoes, parmesean cheese, there is a website that has recipes on how to make foods rich in Umami flavor. And tells you the amount of "Umami" in each food.

Someone requested the website, so I posted it. I am finding this interesting...and am preparing foods that are rich in this flavor, to see what it really is...

veggies in general (im not a big veggie eater so im trying to find more i like)
quinoa: tried it, LOVE it!
Goat meat
Quail
Pot Belly Pig Pork: tried it, its yummy but a little fatty, great sausage pork though! (and yes while there commonly pets here in the usa they are origonally a mini meat breed from vietnam.)

You will like the cabeza. It is very flavorful because there is a lot of fat interspersed among the meat.

Unfortunately as the Hispanic population grows in SE Wisconsin, the cheek meat is a lot more expensive.

I want to try the chicarrone (pork skins) tacos.

Curry of different types, bad () thread here...just saw a recipe for New Orleans etoufee I want to try, I have never had fresh tuna, and want to do a leg of lamb on the grill...My list changes and gets added to regularly...

I have had cabbage rolls only once long time ago...and loved them.
They seem to be hard to find?
Going to try to make some, fingers crossed.
