Cilantro + garlic are essential to a good salsa. The key difference between bottle salsa and fresh salsa is the use of fresh garlic/cilantro.

I love cilantro, fresh only. Never cooked. Sprinkled on a taco, or mixed into my pico de gallo (chopped tomato and chopped onions, with a squeeze of fresh lemon, some pickled jalapeno pepper slices, a clove or two of minced garlic, and cilantro). Basically sprinkled over any savory mexican dish, including rice and beans. Cilantro and dill are two herbs that make me salivate when I smell them.

Can't have enough garlic or cilantro, love it. I will use a mound of cilantro in place of lettuce on tacos.

Julia had as much use for cilantro as I do for duck fat.

I'm one of those people for whom cilantro tastes like soap. If we're at a group dinner and I'm eating salad. Hmm, tastes like soap. Sure enough, there's cilantro in it.
