Cilantro is one of the few herbs that can instantly make my mouth begin to salivate.....I LOVE it. It wasnt always this way.....the first time I grew it and tried it.....I thought it tasted metallic and was awful; I never harvested it or used it. It self seeded......the next year I started to weed out all the little seedling (very prolific)....and my mouth started to water....I couldnt wait to get it into the kitchen and use it......I have loved it ever since. Cilantro and garlic are my top 2 favorite herbs and then Rosemary and then basil.
Can't stand the stuff. Last night our family went to a Mexican restaurant and my (adopted) daughter asked for extra cilantro on her steak tacos. It turned my stomach to even watch her eat that. She said "Well it's obviously we aren't blood relatives."

Cilantro tastes like they smell.
I call it Parsley's Evil Twin. Sometimes I've had falafel where they decided to mix in cilantro instead of parsley. Sometimes I've ordered food that SAYS it is garnished with fresh parsley, but I get it and it's actually garnished with cilantro.
I remember one time following a recipe that called for coriander leaves. I researched and found out it was cilantro leaves. Picked up my first bunch from the store, thinking, WOW this stuff reeks...but maybe it'll be tasty with the rest of the stuff.
NOPE.
Ruined the whole dish.
The funny thing is that I am fine with the seeds. Coriander seeds and ground coriander spice are just fine. Leaves, though? GET THEM AWAY.
Also, kinda sucks living in Texas (or California) and hating cilantro.

I added a cilantro plant to my herb garden this year and suddenly it tasted exactly like SOAP! How did this sudden change happen?
I could never figure out what people were talking about then they claimed it tasted like soap, and now the taste drastically changed to pure soap as soon as I plant my own fresh plant...Literally like a bar of soap in my mouth.
Could it have something to do with the variety I planted?

I don't know why the sudden change for you.
Both cilantro and basil have always had a soapy taste for me, although I like both of them.
My pet bunny loves all kinds of leafy greens and vegetables, but she doesn't seem to care for cilantro, lol. She will eat basil, though.
I remember reading some CD poster a long time ago who said that there was no soapy taste and that everyone just liked to jump on the bandwagon, but I noticed it before I had ever even heard someone else mention it. It's pretty strange. lol
IMO, it does enhance the taste of many dishes and they happen to be Mexican style dishes. It should do just that and not overpower the taste. I find it essential for Pico De Gallo. I add it raw as a garnish to Mexican ranch beans (A La Charra). It's also good on certain soups such as Chicken Tortilla or Seafood Soup. It does taste metallic at times. It is best eaten raw or when cooked slightly. It will turn bitter when over cooked. It will release more flavor when chopped. It is not however uniquely Mexican or Latin American and not even native to that part of the world. It is also used in Asian cooking. Thai or Vietnamese come to mind. The seeds are used as a spice and taste nothing like the leaves. I love Coriander as a spice. It is also known as Chinese Parsley.
We use cilantro a lot and I never could do without it. The flavor is so aromatic and tasty.
