Unfortunatly, we do not have a Lowes Foods. The most "gourmet" grocery store we have anywhere around our small town is Harris Teeter, and they didn't have them. I bought the regular, longer cooking white hominy grits, but I don't think that's the same thing.
Went to the Mast General Store website, and yes, they do have them, Yellow Stone Ground Grits from White's mill.
Your local store probably sells "quick" and "instant" grits. For inclusion in a recipe, I would presume that Quick would be acceptable, and Instant would NOT be. Given that you don't already have stone ground grits ready at hand and already philosophically committed to them, you would probably be contented with the results using Quick.
Yellow stone ground grits are also sold as polenta in some markets. You are right that white hominy grits are not quite the same thing. They would work fine for shrimp and grits but would have less corn flavor.
I'm stickin' with my Jim Dandy grits. Not a dam thing wrong with 'em. They're great.
