Stepka - I had to laugh and then stop to think and then agree! Something I hadn't thought of for the times there's too much for my dryers. I love my dehydraters. Got two from my mother-in-law and really use them. Got my second batch of red huckleberries picked from our property drying as we speak!
Tracy -love the post and thank you! I use cherry tomatoes especially since we have them growing in our garden. Give the pesto recipes posted a shot - actually quite easy and rewarding.
I'm a little confused because all the sundried tomato pesto recipes I can find, including those posted here, call for the "wet" sundried tomatoes--the kind that come in a jar packed in oil. Then the directions say to drain them before making the recipe.
So does that mean I can just use "dry" sundried tomatoes, or do I have to soak them in olive oil, and then drain them first?
I tend to avoid the "wet" sundried tomatoes, as they are usually even more over-priced than the dry ones, and I don't really have a need to eat them packed in oil. I usually throw them into pasta dishes, on top of pizza, or on top of crackers with melted cheese. I don't really "get" the oily ones.
