Now is the best time to preserve fresh herbs. There are three methods:
drying, freezing and..... preserving in salt.

This method best preserves the herbs’ appearance.
Simply layer sea salt and herbs in a glass jar until the jar is full and the herbs are covered. When you’re ready to use your herbs, remove the leaves from the salt and toss them in your recipes.
The sea salt may retain a slight flavor from the herbs. If so, it can be used in recipes instead of plain salt to add a faint hint of herbal flavor. If not, you can use it again to preserve your next batch of herbs, or put it back into your regular sea salt supply.

Thanks, Elnina! Is this also a good idea if we buy a bunch at the store and won't use it all w/in 3 days to a week?

I also assume kosher salt will work just fine, too.

Yes!! People usually use dry or freeze method, not many think about salt...

I usually try to freeze them in an ice cube tray (w/water) & pop them out in stews or sauces.

I do like the salt idea also, I'll have to try it.

Elnina - Something I also hadn't heard, read, or thought of so thank you!Use any herbs - say Basil versus Rosemary because of the thickness of the material?

Yes, so far I know use any herbs, just make sure all is cover with salt. Make layers.
