Last night, since DH was gone, I had a truly awful dinner consisting of a can of chicken mixed with a jar of gravy, over premade mashed potatoes.
Tonight I'm finally making the seafood chowder that I got the fixins for a week ago. Also a big loaf of artisan bread.

Sauteed chicken breast meat over a bed of romaine lettuce.
We might just add some red peps, toms, and cucumbers to the mix.

Chunky blue cheese salad dressing as a topper.

Beef enchiladas w/ Hatch Green chile sauce, smothered with 3 cheese and olives and green onions, baked until bubbly. Anasazi beans cooked the cowboy way, flour tortilla, and orange soda...

Chicken breasts smothered in fried (w/ olive oil) onions/red peppers/garlic. And, baked apples w/brown sugar, cinnamon & walnuts for dessert. And, whipped cream on top (well okay,the non-hydrogenated brand).
