Last August I stopped at a little butcher shop near Lake Pontchartrain and picked up some boudin. Fixed up a side dish of dirty rice and red beans and we had that tonight along with a Shiner Bock. It was a little too hot for my Dutch partner (she'd lived in Mass too long for her to enjoy the heat of Cajun and Tex-Mex)......but that had to be the best Boudin I've ever had.
And just to keep a bit of tradition (some things just go together, ya know?) I had a splash of bourbon in a cup of Le Monde Chicory Coffee after dinner.
Pinto beans soaked and cooked in ham drippings.
The ham bone itself always has quite a bit of meat left on it- even after we've had our way with it.
Homemade cornbread slathered in butter.
