Busy Busy Busy week. We haven't cooked much, I've not even been on CD but a couple of times.
We will either have roasted pork--maybe sandwiches, or with roasted veggies-- or go out with friends.
I marinated a small pork tenderloin-dijon mustard, garlic, rosemary, thyme, olive oil, white wine vinegar-crusted on all sides in an iron skillet then roasted in the oven. We made sandwiches on ciabatta buns with slaw, tomatoes, mushrooms, pickles and peppers. I even made my DH his favorite: chocolate cake with white frosting.

think we have all had a busy week or so with more to come. We spent 2 days in Doctors offices,plus lots of testing and 2 more coming this week. Add to it Christmas with out of town company. That's ok, we are going to have a great time, but eats wise, this past week we have enjoyed more junk food and eaten out more than we usually do in an entire month or more.
Went to a friends house tonight and we ordered Chinese food. I had Chicken with mixed veg, brown rice and an eggroll and for dessert a mini red velvet cupcake.
Tonight was at Dodie's in Frisco, TX. There, I had fried shrimp, fries, shrimp Creole over rice, hush puppies, Cajun coleslaw, and iced tea to wash it all down.
