adding some roasted garlic and cream cheese to the potatoes is good, or sour cream and chives.

We like Bob Evans mashed potatoes or Diners Choice from Publix. I like to add shredded smoked gouda.

Easy! Don't peel 'em!! If you buy small red potatoes, they don't need peeling. Mash 'em, coarsely, with some milk, butter, fresh ground pepper, and garlic salt.

Yup, that's what I would do. When I make "fauxtatoes", I use both, and people are amazed at how close they are to real potatoes.
