Leftovers: last of the split pea soup, along with pork roast & cauliflower from last night. Lower sodium Stove Top stuffing to round it out.

I ended up having a penne pasat with grilled chicken, broccolirabe and sundried tomatoes from a local italian place that delivered. It was good but I really wanted steak LOL

Later this week I'm planning on making King Ranch Casserole and groundnut stew, both of which feature chicken. Because I have a craving for something marsala -- and have mushrooms on hand -- but don't want a THIRD chicken dish, I'm going to make shrimp marsala, if there's such a thing. I'll serve it over bow-tie pasta, and have a side of fresh steamed broccoli.

Spaget and meat balls. It is in the crock pot now and should be ready in a few hours. I did the meatballs yesterday. We will have a salad as well. This is hubby's favorite meal.

Dawn the Shrimp Marsala is great, just deglaze with the wine at the end and reduce to 50%--it will be perfect.

Lubby the other night we went out for steak & it was so tough, I wound up ordering Pizza. One of the many reasons we don't waste money on going out to eat here.

Last night I made 1/2" Center Cut boneless pork chops, seared with blackened spices & baked in the oven with fresh mushrooms, scallions, shallots, red onion, pearl onions, cherry tomatoes, parsley, garlic, with a Merlot reduction, topped on Tubular, tiny pasta baked in chicken broth. It was a winner.

Today, a pot of ham and split pea soup (it is rainy & cold) and chicken Parm., pasta & salad with crispy bread

Our new DIL (well, she's our only DIL, LOL) is making us dinner tonight in their new apartment. She said something about ribs and a dump cake so I am bringing my appetite! Wish DS could be there with us all together.
