Kidney beans and Lamb.
Kidney beans: diced pancetta and onion in one tablespoon of hot olive oil (large pan), 5 minutes later I added beans, 4 cups of water, 1 beef bouillon, fresh ground pepper. Cooked about 30 minutes on medium heat. At the end I added a little Worcestershire and Tabasco in the pan as well as fresh parsley. It's resting now, but came out pretty well (8 oz. of beans, put them in cold water to soak this morning before going to work.)
As for the lamb, I had an idea but then I got lazy and hungry so I am just grilling two pieces of lamb shank, marinated in lemon juices, red wine and crushed red pepper. Simple and quick.
I am drinking Blackstone Cabernet sauvignon, pretty decent wine at very good price. It's not Barolo, but again, the price is good and the wine goes well with any red meat.
Prep and cooking time for all is about 45 minutes, but comfortable (meaning you don't have to be there all the time and can do other things....like typing in this forum...)
