I took out a boneless sirloin pork roast....which I think I will season and cook at a low temp to avoid toughening it or drying it out. I plan to make oven roasted potatoes with it and some carrots and onion slices which I will put under it as a rack....to get it up off the bottom of the pan.

We still have some left over rice which I will also re-heat for my DP.

Steak and Ale Pie ( from the Deli) with steamed Cauliflower, Baby Potatoes and Carrots. Simple and tasty. Spring feels like it is upon us at the moment so now is the time to enjoy the last of winter's comfort foods...

I'm going to make that yummy Horseradish - Dijon sauced shrimp that I like to serve over green beans. Unfortunately, I don't have any green beans! So I'm going to make a slaw of red cabbage, carrots, and green onion to go under it.

A colorful and diet-friendly dinner!

DH has a head cold so all he wants is chicken rice soup from the chinese take out place. I am still making my Chicken quesadilla's anyway. He can have the leftovers tomorrow.
