I was running errands so it was a McDonald's McBistro chicken Swiss mushroom thing which was actually pretty good.
Tomorrow I want to do something with scallops, shrimp and fennel but I don't know exactly what.
The scallop, shrimp, fennel thing turned into this in an orange juice reduction, over basmati rice. I did not have leeks so I substituted onions, and I did not have champagne vinegar so I substituted a dab of balsamic vinegar.
It was great but it needed a green salad, which I just didn't have the energy for.
Today, a wonderful lady from our church brought us a beautiful and tasty broccoli, chicken casserole. She knew we were having a difficult week. Thanks Mrs. Barbara.
it is very exciting: left over chicken wings, left over egg casarole, the little bit of cauliflower and broccoli that is in the fridge and fruit before it spoils. Now, that is what I call a "don't waste food" meal.
