Leftovers. I had feta and spinach stuffed chicken, corn on the cob and broccoli and cheese. Hubby had marinated chicken breast, beans, and shoepeg corn.
I boiled some chicken quarters for an hour or two this afternoon. I took them out skimmed the fat off the liquid in the pot and started from there. I put in lots of onions cause I love them, a couple of sliced carrots, a handfull of sliced celery, two handfulls of rice and some bay leaves. I boiled this till done and then I put in one package of leek wontons that I bought at the Asian store. I separated all the chicken meat off the bones, chopped that up into bite sized pieces and put that in the pot. I cooked it till the wontons were done, 5 minutes. It was just so good. It was a pretty big pot full and it's all gone.
Either filet mignon with baked, loaded potatoes which hubby would favour, or potato soup and fresh bread, which I would favour. I haven't felt like eating anything heavy lately.
Going out to dinner at a place called verace in my home town. I will have shrimp scampi over linguini, cheese course for appetizer (shared) and maybe broccoli rabe with garlic and oil as a side dish
Cleaning out my deep freezer so have a pot of veggie soup simmering, bread dough rising. German chocolate cake from scratch for dessert. Reckon Nomad will have leftovers from scratch?
